Growing Conditions
The wine is born in the Sangiovese vineyards in Loc. Montelodoli which develop at 480 meters above sea level. They are the warmest and sunniest vineyards in the cellar, with strong temperature variations between day and night. The vineyard from which this wine is born is rich in skeleton with a marked clay component, characteristics that give the grapes the right compromise between acidity and tannic richness.
Harvest
End of September, first days of October
Winemaking
After a careful selection in the vineyard during the harvest done exclusively by hand, the grapes are taken to the cellar in small boxes. The vinification protocol provides for a fermentation with a minimum of 50% of the whole bunch in stainless steel tanks at a controlled temperature. Almost at the end of the alcoholic fermentation, it is drawn off and pressed to finish the fermentation.
Aging
The refinement of about 24 months is carried out in non-new 500-liter tonneaux and large barrels and a further 6 months in the bottle.
