Winemaking
Vinification in wooden barrels and cement vats, without the use of added yeasts and without temperature control. 20% whole bunches are used, 30 days of maceration on the skins with manual punching down.
Refining in bottle for min 8 months
Aging
One year in wooden barrels and cement vats; in September, with the new harvest, it is bottled to make room for the new vintage. In the bottle for at least another 12 months.
