Winemaking

100 hl stainless steel vats fermenters with temperature control, alcoholic fermentation around 24/26 °C and around 10 days maceration at 28/30 °C, daily wine tastings allow to check colors and tannins extraction.

Aging

Aging in Slavonian oak hl 20/25 for 30 months.

Appearance

Dark ruby-red, tending to garnet-red on aging.

Food Pairing

Enjoy it with powerful meat dishes, such as a Bistecca Fiorentina with a side of greens, spice-intense stews, like an Indian Chickpea-Curry, or simply a nice platter of aged cheese - try Pecorino with truffled honey on the side.
