Sangiovese: Sept. 22nd- 24th-25th–29th-30th, Oct 1st 3,15
Canaiolo: September 21st and 22nd
Colorino: September 25th
After the maturation phase, the Chianti Classico Rocca di Montegrossi is bottled without undergoing filtration processes. Subsequently, it undergoes bottle aging for an additional 6 months before being released to the market.
It is primarily composed of Sangiovese (approximately 90%) and also contains a small percentage of Canaiolo (10%).
Period of fermentation: 10 days
Temperature of fermentation: 27°C
Ageing: 11 months in glass-lined concrete vats and Allier oak vats from 54 to 56 Hl.
The maturation of this wine mainly takes place in Allier oak barrels and tanks for a period of approximately 12 months
In the glass, this wine presents itself with a lively ruby red color, accentuated by violet reflections.
