Palate
This is a full bodied wine that wraps around your palate, fills it with mature tannins and a richness of flavors. Paolina contributes also with a cheerful finish spicy and persistent.
Growing Conditions
The small size of our plantings allow us to produce wines that truly represent the small micro-climate of our hillside and its characteristic deep clay and chalky soil. This terrain requires rigorous and careful work every year to ensure the perfect conditions for creating rich, intense and long-lived wines.
By following the principles of integrated production and carrying out sustainable processing of the vineyards, we respect, protect, and enhance our terroir with its unique features so that our range of products are the ultimate expression of the land and reflect its authenticity.
Winemaking
This wine is a result of a carefully chosen and hand picked selection of grapes from the best exposure among the vine fields.
Aging
The aging of 14 months takes place in big oak barrels according to the tradition of Paolina, and then the wine is maturing in bottles for at least 2 years.
Appearance
A harmonious and elegant wine. It has an intense ruby red color, deep and inviting.
