Growing Conditions
The grapes come from the youngest plots, located on soils with loose texture, rich in stone and marl.
Harvest
Selected and harvested by hand in boxes.
Winemaking
Fermentation then takes place in steel vats during which frequent pumping over, checks and tastings are carried out. After about 3 weeks the wine is separated from the skins and begins its refinement in tonneaux and steel where it matures for about 12 months. Then follows another period of refinement in steel where the wine completes its course before bottling.
Aging
Sangiovese : 12 months in steel
Merlot : 12 months in tonneaux
Final cut : 6 months in steel before bottling
