Growing Conditions

For a long time 2003 will be remembered as one of the hottest summers of the last decades, with very high temperatures from May to August and a historic minimum of rainfall, with only 40 mm of rain in five months. The consequence of this seasonal trend was the very low quantity of yields, below that of quality, beyond a certain suffering in the vineyard due to water stress, perfectly healthy grapes, with high sugar levels.

Winemaking

The grapes are placed in dehumidified rooms where they undergo assisted drying. After they are cooled and pressed, the must starts a slow fermentation that brings out the aromatic elements.
